Toasted Rice Cakes with Melted Goat Monterey Jack

2 large round rice cakes
4 cherry tomatoes sliced in half (8 halves)
2-3 ounces goat Cheddar or Monterey Jack

Place four halves of cherry tomatoes on each rice cake. Slice thinly or grate cheese and place onto top of tomatoes on rice cakes. Heat in a toaster oven until cheese is melted. Do not let rice cakes burn. Add sliced avocado for variation.

Frozen Bananas Bits

1 Ripe banana but not too soft
Almond Butter or Peanut Butter
Raisins or crushed walnuts or other nuts

Variation 1- Peel banana. Push a chopstick up through the banana lengthwise. Smear nut butter on one half of banana. Roll nut butter side in crushed walnuts. Place on wax paper in freezer for 6 hours or over night.

Variation 2- Peel banana. Cut into quarter inch rounds. Smear each round with nut butter. Garnish with a raisin or walnut and freeze for 4 or more hours.

Popcorn with Parmesan and Nutritional Yeast Flakes

4-6 cups popped popcorn
1/2 cup Nutritional Yeast Flakes
1/4 cup grated parmesan or pecorino cheese
Salt to taste

In a paper or zip lock bag combine all ingredients and shake up. You can also add some melted butter. Yummy.

Strawberry Banana Protein Shake

1 ripe banana
4 strawberries
4-6 ice cubes
10 oz. rice milk
2 dates (pitted)
2 tables spoons rice protein powder

Place all ingredients in a blender and blend. Add more milk for a thinner consistency.

Cucumber Cottage Cheese Boats

1 English cucumber
2-4 ounces low fat cottage cheese
Salt and pepper to taste

Peel cucumber. Cut in half and then cut lengthwise. Scoop seeds out of cucumber with a spoon. Lay cottage cheese into the opening and then salt and pepper to taste.
